A delicious bread that resembles a cake! Contains whole buckwheat flour that provides a respectable amount of dietary fiber, vitamins and minerals. Contains little gluten compared to wheat and therefore is better digested. Suitable for Crohn's disease, Ulcerative colitis and Diverticulitis (during remission). Not suitable during acute flare-ups.
Ingredients:
2 cups of buckwheat flour,
¾ of a teaspoon of salt,
1 teaspoon of baking powder,
8 tbsps of coconut oil,
2 organic eggs,
1 teaspoon of natural vanilla extract,
150 grams of natural yogurt,
2 ripe bananas, peeled and mashed.
Instructions:
Mix the dry ingredients and the wet ingredients separately (without the bananas).
Mix everything together, add the bananas and mix to a smooth consistency.
Transfer the mixture to a greased pan lined with baking paper and bake for about 45 minutes at 180 degrees.
insert a metal or a wooden skewer inside, and make sure it comes out clean.
Serve after the bread is cooled down.
