Oven-Baked White Fish with Steamed Vegetables

Ingredients:

  • white fish fillets (cod, haddock, or halibut), about 6 oz each

  • 2 cups mixed vegetables (broccoli, carrots, green beans)

  • 2 tbsp olive oil or butter

  • 1 lemon

  • 2 cloves garlic, minced

  • Salt and pepper to taste

  • Optional: fresh herbs like parsley or dill

Instructions:

  • Preheat oven to 400°F (200°C)

  • Prepare fish:Pat fish dry with paper towels
    Place in baking dish
    Drizzle with olive oil or dot with butter
    Season with salt, pepper, and minced garlic
    Add lemon slices on top

  • Bake fish:Cook for 12-15 minutes until fish flakes easily
    Cooking time may vary depending on thickness
    Fish is done when it reaches 145°F internal temperature

  • While fish bakes, steam vegetables:Bring 1 inch water to boil in pot with steamer basket
    Add harder vegetables first (carrots: 5 mins)
    Add broccoli and green beans (3-4 mins)
    Vegetables should be tender-crisp
    Season with salt and pepper

  • Serve:Place fish and vegetables on plates
    Drizzle with pan juices
    Add fresh squeeze of lemon
    Garnish with herbs if desired
