A wonderful warming and comforting soup for cold days. Rich in fiber and protein. Can be suitable as part of a natural treatment for constipation, Gastritis and IBS. Can be also consumed during Crohn's and Ulcerative colitis according to individual toleration.
Ingredients:
1 large onion,
1/3 of ginger root cut into small cubes,
2 stalks of celery cut into cubes,
½ a fennel thinly sliced
1 large carrot cut into cubes,
2 potatoes
1 fresh broccoli cut into heads,
2 cups dry peas,
spices: a teaspoon of each: salt, rosemary, turmeric, thyme and basil.
1-1.5 litters of boiling water
Instructions:
Fry the onion in a pot for about two minutes with a little bit of olive oil. Add celery fennel, and some water and continue frying/steaming for about ten minutes.
When the onion is slightly golden, add the peas and cover everything with water. Bring to a boil. Add potato ginger and spices and cook for about half an hour.
Add the broccoli and cook for another 15 mins
You can mash the soup to a smooth consistency or leave it chunky.
