Quinoa Salad

Amazing , nutritious and mouthwatering salad. Rich in fiber, vitamins, minerals, antioxidants and protein.
Excellent for situations where you need to restore and nourish the intestinal bacteria. The zesty dressing has the perfect balance of acidic lemon juice and smooth olive oil. Not suitable for conditions of intestinal inflammation or diarrhea.

Ingredients:

1 small grated/chopped cooked beetroot

1 thinly grated carrot

A handful of baby leaves

A handful of beet leaves

1 Chopped cucumber

2 green onions, chopped

2-3 stalks of chopped parsley

2-3 stalks of chopped coriander

1 avocado

A handful of chopped walnuts

2 tablespoons crumbled feta goat cheese (optional)

3 tablespoons of cooked quinoa

For seasoning: 2 tablespoons of olive oil, a tablespoon of balsamic vinegar, half a squeezed lemon

Instructions:

Mix all the ingredients, season and serve
